Curry Stew

Ingredients:



Directions:

1. Peel and slice carrots and potatoes. Place in 6 cups boiling water, let boil until carrots and potatoes are tender. The volume of water is important!

2. While the carrots and potatoes are boiling, cook the 1 pound of meat in a wok (lightly oiled), stirring frequently.

3. Remove skin from onion, cut into 6 sections. Separate the layers of onion, add to wok and cook, stirring frequently, until onions begin to brown.

4. Chop mushrooms, add to wok, cook for a few minutes, stirring frequently.

5. Add the potato, carrot and water mixture to the wok, stir. Add water if needed (the contents of the wok should be very stew-like, not soupy; you can always add more water if needed at the end.)

6. Finely chop up the curry sauce mix (it comes in the form of a big bar), stir into the contents of the wok until the curry sauce mix dissolves completely. Serve over rice.
