Maple-Mustard Glazed Pork Roast

Directions:

1. Preheat oven to 325F.

2. Combine maple syrup, Dijon mustard, cider vinegar, soy sauce, salt and pepper in a bowl.

3. Place roast into a shallow baking dish; spread 2 tablespoons maple syrup mixture over roast. Place roast in oven.

4. Bake for 45 minutes to 1 1/2 hours, until internal temperature is 150F on a meat thermometer.

5. Let roast sit 10 minutes before carving. Serve with potato wedges, salad and rustic bread.
